gel
Gel je sol u kojem su čvrste čestice spojene ili nakupljene kako bi nastala rigidna ili polurigidna mješavina. Na primjer, želatina otopljena u vodi proizvodi sol proteinskih molekula. Kad se želatina kuha, proteinski lanci skupljaju se i križaju, formiraju gel koji je mješavina čvrstih proteina s zarobljenim džepovima tekućine između. Voćni želei su isto gelovi.
